Homemade Chicken Nuggets

(30 min) Makes eight servings
  • 26 oz Cooked chicken breast
  • 1/2 Onion
  • 2 Tbsp. of parsley1 Small peeled apple
  • 3 Slices of whole wheat bread
  • 1 Tablet of chicken broth
  • Canola spray oil
  • 1 Egg, lightly beaten
  • 1 1/2 Cups breadcrumbs (homemade)
  • 1 liter Canola oil
Directions

Chop the first five ingredients and toss them in a food processor, throw the chicken broth tablet in there as well.

Grind until all ingredients are fully integrated.

Spray your hands with oil spray, and mold the nuggets into any shape you wish.

Deep the small ball in the lightly beaten egg a and roll in bread crumbs. .Fry in hot oil, until slightly browned.

Flip halfway through if you want both sides crispy.

Place the nuggets in a plastic food container.

Dip in ketchup.

These nuggets are healthy since they have apple, which also makes them more moist and soft.

Fish and Mango Ceviche

(3 min) Makes four portions

  • 2 cups Lime juice
  • 1 Orange, juice
  • 1/2 cup Chopped cilantro (optional)
  • 1 tsp. Salt
  • 35 oz. Sea bass, sawfish, huachinango or shrimp, diced
  • 2 Mangos, diced
  • Whole wheat crackers
Directions

Combine orange, lime juice, cilantro and salt. Cover and refrigerate 1 hour.

Pour the mix on the fish of your election, and marinate for 2 hours.

After the ceviche has sat, add the mango. Mix well, then recover and refrigerate another 30 minutes.

Place the ceviche in a plastic food container.

Cheese and Avocado Sandwich

(8 min.) makes one serving

  • 2 Slices whole wheat bread
  • 2 Slices panela cheese
  • 2 slices American cheese
  • 1/2 Avocado, skinless
  • 1 tsp. Lime juice
  • Salt
Directions

Place bread slices on a chopping board and cut the sides (crust).

Let your child choose the cookie cutter. Cut each slice of bread into the shape your child wishes.

Remove the figures and keep the leftovers for another occasion. Do the same with the cheeses slices.

Place the avocado in a bowl and mash it.

Add lemon juice to the mashed avocado and salt it to taste.

Spread the avocado on one of the bread figures, add the cheese slices and top with the other bread figure.

Sushi Balls

(45 min) Makes six servings

  • 1 1/4 cups Sushi rice
  • 1 1/2 cups Water
  • 1 cup Boiled carrots, diced
  • 1 cup Shredded chicken
  • 1 tbsp. Peanut oil
  • 1 1/2 cups Soy sauce, light
  • 1 lime, juice
Directions

Cook rice according to package directions, in this case it 1 cup of rice for 350 ml of water over medium heat for 30 minutes.

Mix the chicken and carrots together, toss the into a pot, add peanut oil and cook the mix over a low fire, for 25 minutes.

Blend the rice and the mix, together.

Shape the rice into balls.

Sprinkle the rice balls with lime juice and soy sauce.

Guacamole and Tortilla Chips

(8 min) makes 2 servings

  • 1 cup Avocado, chopped
  • 2 tbsp. Natural yogurt, light
  • 1 tbsp. Mayonnaise, light
  • 1 tbsp. Lemon juice
  • 1/8 tsp. Salt
  • 4 large Corn tortillas
  • 1/2 liter Canola oil
Directions

Mix the avocado, yogurt, mayonnaise, lemon juice and salt, in a meidum bowl.

Mash with a fork.

Cover the top of the bowl with a plastic wrap.

Place a tortilla on a chopping board and, use small cookie molds to make tortilla chips figures.

Fry the tortilla in very hot oil until browned.

Remove the tortilla chips from the oil and drain them on paper towels. Place the guacamole and tortilla chips in a plastic food container with divisions.
