Garden Island Guava Banana Salad
Number of Servings:
Makes 6 servings Ingredients:
1 package (3 ounces) lemon–flavored gelatin
1 1/2 cups (11.5 fluid–ounce can) Kern's Nectar, Guava, divided
1 cup (8 ounce container) vanilla or banana–flavored yogurt
2 medium ripe bananas, thinly sliced
Instructions:
PLACE gelatin in large mixer bowl. Bring 1 cup nectar to a boil in small saucepan. Remove from heat; stir into gelatin. Add remaining nectar and yogurt; beat until well blended. Pour into shallow dish.
CHILL in freezer for 30 to 35 mins. or until firm about 1 inch around edge, but still soft in center. Pour into large mixer bowl; whip until fluffy. Fold in bananas.
POUR into 1–quart mold or individual molds. Chill until firm. Invert mold(s) onto crisp lettuce greens before serving.
